The weird and wonderful coelacanth was believed to be extinct until one was caught in 1938! Its name is pronounced SEEL-uh-kanth. They are nocturnal fish with most of their day spend resting in caves. No wonder we thought they were extinct! They taste pretty average compared to other fish - their flesh contains high amounts of oil, urea and wax.
